You guys, I am obsessed with this Mediterranean-inspired salad at the moment and for good reason. The Israeli couscous is cooked to perfection and tossed with a tangy dressing and loads of fresh produce. I love fresh easy sides, that can become a great summer evening meal, that is loaded with flavors that even my kids will love! This one checks all the boxes!
